JJ's Lemon Shrimp with Garlic Toast

Ingredients

Garlic Toast

  • 2 cloves garlic, minced
  • 2 Tablespoons butter
  • 2 pieces crusty Italian or French bread

Lemon Shrimp

  • 1lb. shrimp, rinsed peeled and deveined
  • ¼ cup all-purpose flour
  • 1 teaspoon ground pepper
  • 3 Tablespoons butter
  • 1 Tablespoon olive oil
  • 1 cup white wine
  • 1 ounce lemon juice
  • 6 Tablespoons cold butter cut into chunks
  • 1 medium tomato, diced in large chunks

 

 

Directions

Garlic Toast

Preheat broiler. Melt butter in sauté pan and add garlic. Sauté garlic for 2 minutes. Lay bread in pan and let it soak up garlic butter for 15 to 20 seconds. Toast bread under broiler until lightly brown.

Lemon Shrimp

Mix flour and pepper in a bowl. Dredge shrimp in flour and shake off any excess. In sauté pan over medium heat, melt 3 tablespoons of butter and add olive oil. Heat until butter is foamy. When butter is foamy, add shrimp and heat until shrimp is cooked. Remove shrimp and discard excess butter. Deglaze pan by returning it to medium heat and pouring in wine. Reduce wine for 2 minutes and add lemon juice. Reduce lemon juice and wine by ½, about 3 to 4 minutes. Stir in 3 tablespoons cold butter. Stir in remaining cold butter 1 tablespoon at a time until sauce is creamy (should coat the back of a spoon). Add tomato and return shrimp and heat for 30 seconds. Toss and serve with garlic toast.
